We break the eggs and separate the whites from the yolks.
- Chicken egg: 2 pieces

Add cottage cheese to the yolks in a bowl. If the cottage cheese is grainy, it's better to pass it through a sieve. The cottage cheese can be any type, but not liquid; otherwise, you'll need to add more flour, making the pancakes firmer and more doughy in taste.
- Cottage cheese: 200 g

Grate the apples and add them to the cottage cheese with the yolks. Mix the mass well to prevent the apples from darkening.
- Apple: 2 pieces

Add flour, cinnamon, sugar, lemon juice, salt and mix thoroughly.
- Wheat flour: 4 tablespoons
- Cinnamon: 1 teaspoon
- Sugar: 2 tablespoons
- Lemon juice: 1 tablespoon
- Salt: pinch

In a separate bowl, beat the egg whites. The beaten egg whites should turn bright white and hold their shape well.

Gently fold the whipped egg whites into the cottage cheese mixture and mix well.

We heat the pan. You can use a little butter for frying, but I fry in a dry non-stick pan.

We spoon our dough onto the pan. Fry for about 2 minutes on each side over low heat. It's better if the pancakes are not too thick, otherwise they will burn and won't cook through.
