    Peel the carrot and grate it on a fine grater in a food processor, finely chop a small onion, grate the flavorful cheese (Gouda), add eggs, 3-4 tablespoons of any flour (I used chickpea flour), a little salt (the cheese is salty), and pepper.

    Line the baking tray with parchment paper, pour 3 tablespoons of oil, and spread it evenly over the paper.

    Carefully place the pancakes and put them in a preheated (200°C) oven on convection for 20-25 minutes. In a regular oven, for 30-35 minutes.

    When they start to brown on top - flip them. Bake until golden-brown.
