Slice the peppers into thin strips, removing the core and seeds. Cut the nectarines in half and remove the pit.

Fry the peppers in heated olive oil until soft, add salt, pepper, and sugar, and transfer to a separate dish.

In the same pan, melt the butter and sauté the nectarines on both sides until they have a caramel crust. Return the pepper to the nectarines, add vinegar, lemon juice, and honey. Remove from heat and let it steep.
