Eggs Benedict is an iconic dish of British cuisine that embodies elegance and sophistication. Its origins are linked to 19th century New York when stockbroker Lemuel Benedict ordered something restorative after a long night. The harmony of airy poached eggs, crispy bacon, and aromatic hollandaise sauce on toasted bread creates a unique flavor, combining the tenderness of butter, the slight acidity of lemon juice, and the subtle spice of white pepper. Preparing eggs. In a medium skillet over medium heat, bring water to a boil, add salt and vinegar. Crack the eggs into 4 small plates. Pour the eggs into the gently simmering water, turn off the heat, cover the skillet and cook the eggs until the whites are set. This will take about 4 minutes. Use a slotted spoon to transfer the eggs to a bowl of ice water.
- Salt: to taste
- White vinegar: 2 tablespoons

Preheat the oven to 100 degrees. Cut the rolls in half and toast them in the oven. Spread warm rolls with butter, place on plates, and keep in the oven to stay warm. Melt the remaining butter in a pan and fry the bacon. Place crispy bacon slices on the rolls.

We prepare hollandaise sauce. Melt unsalted butter over low heat. In another pan, mix egg yolks, lemon juice, 1 tbsp of water, season with salt and pepper and cook over medium heat while constantly stirring until the sauce thickens. Remove the pan from heat and whisk in melted butter one tablespoon at a time. The sauce should be thick.

- Unsalted butter: 12 tablespoons
- Egg yolk: 3 pieces
- Freshly squeezed lemon juice: 1 tablespoon
- Ground white pepper: to taste

In a pot of boiling water, heat the cooked eggs, then transfer them to paper towels with a slotted spoon to drain the water. Place 1 egg and 1 tablespoon of sauce on each bacon roll. Garnish with parsley and serve. Enjoy your meal!
