Apple pancakes are a cozy, homemade treat known in Russian cuisine for many generations. Tender, airy, and slightly crispy at the edges, they combine the sweetness of apples with subtle vanilla notes and a hint of tartness. Traditionally made in the autumn season when apples were particularly fragrant, they are served with honey, jam or simply dusted with powdered sugar as a perfect complement to a cup of hot tea. The simplicity of the recipe makes it accessible for any occasion—be it a family breakfast or a cozy evening with loved ones. They not only satisfy hunger but also provide a sense of warmth and homeliness, evoking nostalgia for grandmother's kitchen.

1
Peel the apples and grate them on a coarse grater.
- Apple: 3 pieces
2
Mix with sugar and eggs. Then add salt, baking soda, and flour. Flour should be added gradually until the dough reaches the consistency of thick sour cream.
- Sugar: 2 tablespoons
- Chicken egg: 2 pieces
- Salt: 0.3 teaspoon
- Soda: pinch
- Wheat flour: 5 tablespoon
3
Heat the pan, but not too much. The pancakes should not burn and should cook well.
4
Fry in vegetable oil, using a tablespoon to place the batter. When flipping the pancakes to the other side, be sure to cover the pan with a lid.
- Sunflower oil: 50 ml
5
Let the pancakes cool slightly, then sprinkle them with powdered sugar (you can also spread honey on them).
- Sugar: 2 tablespoons
