Cheese puffs are tender, airy, and aromatic flatbreads that are easy to prepare and delight with their rich flavor. This signature recipe combines simplicity of ingredients with richness of taste, making it perfect for breakfast or a snack. Historically, such puffs trace back to home baking traditions where kefir acts as a natural leavening agent and cheese adds zest. They have a soft texture and a golden crust that is especially appetizing after frying. They can be served hot with herbs, ham, or an extra portion of cheese. Their lightness and delicate flavor make them versatile: they complement home gatherings beautifully and are also suitable for cozy family meals.

1
Mix kefir with grated cheese. Add sugar and baking soda. A pinch of salt can be added.
- Kefir: 1 glass
- Grated cheese: 1 glass
- Sugar: 0.5 teaspoon
- Soda: 0.5 teaspoon
- Salt: pinch
2
Add flour. It may require from 1.5 to 2 cups (I used 1.5 cups, and my acquaintance used 2; it depends on the flour).
- Wheat flour: 2 glasss
3
Mix well.
4
Spoon the dough into heated vegetable oil in a pan (I got 13 puffs from this amount of dough). Fry on one side for a few minutes over slightly less than medium heat. The puffs should rise significantly in height (mine definitely doubled).
5
Place the finished pastries on a paper towel to remove excess oil.
6
Serve hot. Can be with soft cheese, herbs, or ham.
