Dietary mousse from zucchini

Clean and chop 300–400 grams of zucchini. Then boil for about 10 minutes, drain the water (can be steamed). Blend until pureed.
- Zucchini: 300 pieces

Whip 1 large or 2 small egg whites with salt into a firm foam at high speed. Mix with zucchini puree. Add chopped herbs (parsley or mint, for example), pepper, and mix with the mixer on low speed.
- Egg white: 1 piece
- Salt: pinch
- Spices: to taste
- Ground black pepper: to taste

In portion molds (with this amount of ingredients, 2 pieces are needed), pour and level oat bran (flakes) at the bottom, then place the protein-vegetable mixture on top. Bake in a water bath in the oven at 150 degrees for 30-40 minutes until lightly browned.
