Chernigov borscht differs from the classic one in the choice of ingredients: beans, zucchini and apple are added to it. Due to this, the taste of the borscht is brighter and the texture is rich. This is a very rich and thick soup, in addition to the above ingredients, potatoes, cabbage and, of course, meat are added to it, in this case, pork, on which the broth is cooked. It is easy to prepare borscht - follow our instructions.

Prepare the necessary ingredients.

Pour 5 liters of water over the meat, place it on the fire and bring to a boil. Skim off the foam, reduce the heat, add an onion, carrot, bay leaf, allspice and black peppercorns. Cook for 1.5–2 hours.
- Pork: 500 g

- Bay leaf: 1 piece
- Allspice peas: to taste

Soak the beans in cold water overnight. Then drain the water and boil the beans in fresh water until soft.
- Beans: 50 g

Cut the beet into strips and simmer with 50 ml of water, vinegar, salt, and sugar for 20-30 minutes over low heat.

Sauté the onion, cut into strips, with grated carrot and celery in melted butter until golden.
- Onion: 2 heads
- Carrot: 2 pieces
- Celery root: 80 g
- Melted butter: 40 g

Then add the tomato paste, stir for a couple more minutes and remove from heat.
- Tomato paste: 50 g

Strain the prepared broth, cut the meat, return it to the broth, and put it back on the heat.
- Pork: 500 g

Cut the zucchini into cubes and fry it in melted butter.
- Zucchini: 200 g
- Melted butter: 40 g

Add zucchini, sautéed vegetables, beetroot, beans, diced potatoes, shredded cabbage, and julienned apple to the boiling broth; season with salt and pepper to taste. Cook on low heat for 30 minutes.
- Zucchini: 200 g

- White cabbage: 800 g
- Apple: 1 piece
- Beans: 50 g
- Beet: 400 g
- Salt: to taste
- Ground black pepper: to taste
