Preheat the oven to 190 degrees. Line 2 baking sheets with foil. Place almonds and walnuts on 1 sheet and bake for 10 minutes until golden. Cool and chop slightly.

Reduce the oven temperature to 150 degrees. Spread the oats on 2 baking sheets. In a small bowl, mix softened butter, honey, and salt. Drizzle the honey mixture over the oats and stir gently. Spread in a single layer and bake in the oven for 30 minutes, stirring once. The oats should be golden and crispy.
