Boltonha in Portuguese with potato straw and salted cod is a traditional dish of Portuguese cuisine, combining simplicity of preparation and rich sea flavor. It has its roots in fishing ports where cod was the main ingredient, and eggs and potatoes were accessible products. Salted cod gives the dish a rich umami flavor, harmoniously complemented by crispy potato straw and the softness of eggs. The light aroma of fried onions enhances the overall depth of flavor. This dish is perfect for a cozy home dinner or a traditional Portuguese feast where food is part of the culture. Boltonha can be served with herbs and fresh bread, making it even more appealing and hearty.
