Cheesecakes with strawberry sauce

2 servings

15 minutes

Cheese pancakes with strawberry sauce are a delicate and aromatic dish of Russian cuisine that combines the softness of cottage cheese dough with the bright freshness of berry sauce. The origins of the recipe date back centuries when cottage cheese was the basis of many Slavic dishes. Thanks to semolina, the pancakes acquire lightness, while raisins add a subtle sweet note. The strawberry sauce with lime and mint transforms this classic treat into a true gastronomic delight. The crispy crust, airy texture, and sweet-sour taste make them perfect for breakfast or dessert. Serving them with fragrant strawberry mojito sauce offers a harmonious blend of tradition and modernity—the tenderness of the pancakes pairs beautifully with refreshing berry notes. This dish not only warms the soul but also delights the taste buds!

Make cheese pancakes. Take the dough out of the fridge. Sprinkle flour on the surface and form a sausage shape. Important: do not mix flour into the dough. Cut into six equal parts. Roll into balls. Trim the shape with a knife. Place the semi-finished cheese pancakes in the freezer for 10 minutes: this way they won't fall apart when frying and will get a crispy crust.
