Viennese waffles with cinnamon are a refined dessert of Austrian cuisine that combines softness and a light crunch. Their aroma is filled with the warmth of cinnamon, nutmeg, and vanilla, creating a cozy delight. Historically, Viennese waffles emerged as a sophisticated treat from Austrian confectioners that won hearts worldwide. Their texture is airy yet dense, and the flavor is a harmony of butter, cane sugar sweetness, and exquisite spices. They are perfect as a standalone treat, especially on cool evenings with a cup of hot tea or coffee. They can be adorned with fresh berries, powdered sugar or served with honey, syrup or ice cream. These waffles symbolize comfort and culinary elegance, ideal for a leisurely breakfast or pleasant tea time.

1
In one bowl, beat the eggs, soft butter, and brown sugar. Everything should be at room temperature.
- Chicken egg: 4 pieces
- Butter: 200 g
- Cane sugar: 6 tablespoons
2
When the sugar is completely dissolved, add the powdered sugar. Continue whisking until smooth. Then add the kefir.
- Powdered sugar: 3 tablespoons
- Kefir: 3 tablespoons
3
Gradually add the flour and add the baking powder. You can mix the baking powder and flour beforehand and add them together.
- Wheat flour: 200 g
- Baking powder: pinch
4
Bring the dough to a uniform consistency. It should be slightly thicker than pancake batter (but not too thick).
5
Add cinnamon, vanilla, and nutmeg to taste. The more cinnamon, the better.
- Ground cinnamon: to taste
- Vanilla sugar: to taste
- Ground nutmeg: to taste
6
Bake each waffle (or every two waffles, depending on the waffle maker) for about 5 minutes until a golden crust forms. Waffles should not be baked until crispy; they should be dense and have a crust. They will become slightly crispy when cooled.
7
Chilled waffles can be decorated with powdered sugar and fruits. They can also be served with syrup, whipped cream, or ice cream.
- Powdered sugar: 3 tablespoons
