Preheat the oven to 200–210°, convection mode.

Sift both types of flour into a deep bowl. Add spices, grated cheese, and diced cold butter. Crumble the mixture, pour in chilled milk (can be replaced with low-fat cream), and quickly knead the shortcrust pastry.
- Whole wheat flour: 110 g
- Rye flour: 30 g
- Ground paprika: 1 g
- Ground black pepper: 1 g
- Gouda cheese: 40 g
- Unsalted butter: 55 g
- Milk: 55 ml

Roll out the dough on baking paper to a thickness of 0.3–0.5 cm, cut into squares, and prick with a fork. Optionally, sprinkle the future cracker with coarse salt.
