Odessa forshmak

Forshmak, which does not contain a single piece of apple or egg, but does have a Sverdlovsk bun and lemon juice. The editors got to know this recipe by Lara Katsova rather late - but now they make forshmak only this way. This is, in fact, a herring tartare with a rich, meaty taste. From our "Golden Thousand"!

Prepare the necessary ingredients.

Remove the crusts from the buns, crumble them, and soak in milk. Leave for 5-10 minutes.
- Sverdlovsk bun: 2 pieces
- Milk: 400 ml

Finely chop the shallot.
- Shallots: 2 pieces

Cut the cucumbers into strips.
- Cucumbers: 1 piece

Cut the herring into small cubes.
- Lightly salted herring: 2 pieces

Then add the squeezed bun to it.
- Sverdlovsk bun: 2 pieces

Add butter, continue chopping, mixing the ingredients until a uniform mass.
- Butter: 60 g

Add shallots, lemon juice, and chop everything again with a knife.

Place a cucumber on a slice of Borodinsky bread.
