Sun-dried tomatoes

Sun-dried tomatoes are one of the treasures of Italian cuisine, creating a burst of flavor in any dish. Historically, this drying method originated in sunny Italy where farmers dried tomatoes in the sun to preserve them for winter. Sun-dried tomatoes have a rich sweet-umami flavor with a slight tang that pairs wonderfully with cheese, pasta, bread, and meat dishes. Garlic and thyme add a spicy kick while olive oil enhances their aroma. They can be used as a standalone snack or added to salads, risottos, sauces, and bruschettas. This recipe will allow you to make soft, aromatic sun-dried tomatoes at home while preserving their juiciness and natural sweetness.
