Marinated zucchini fried on a grill pan is a light and aromatic dish of Russian cuisine that combines the freshness of summer vegetables with rich notes of marinade. The tradition of pickling vegetables is deeply rooted in Russian gastronomy, adding extra zest to them.     First, place the grill pan on the stove and heat it well. Meanwhile, prepare the ingredients.

    Zucchini can be cut into regular rounds or diagonal slices no thicker than 1 centimeter (preferably 0.5-0.7 mm).

    Next, we mix lemon juice, salt, sugar, pepper, the seasoning 'Italian herbs', mustard, and garlic pressed through a garlic press. Then we start adding olive oil (I usually use Maestro de Oliva) — preferably one spoon at a time while constantly stirring.

    After that, you will need a bag to put the sliced zucchini in and pour the prepared marinade over them. The most important thing is to have as little air as possible inside the bag, then leave it in the fridge for at least 1 hour, so the vegetables will definitely soak in. You can even leave it for 2-3 hours; it won't be worse, tested ;). I didn't flip the bag after half an hour, but the taste still turned out to be quite rich.

    By this time, the pan should be well heated, so you can reduce the heat to medium or slightly below (depending on your stove's power). Before placing the slices in the pan, let the juice drain — otherwise, its excess will instantly evaporate in the pan. Fry as usual for about 5 minutes on each side.
