Finely chop the chicken fillet. Add garlic pressed through a garlic press, dry gelatin, salt, spices, and Provencal herbs.
- Chicken fillet: 2 pieces
- Garlic: 2 cloves
- Gelatin: 15 g
- Ground red pepper: to taste
- Provencal herbs: to taste
- Ground black pepper: to taste

Mix everything thoroughly and place it in a baking bag, tying both ends. For added security, you can wrap it in a second layer of film. Place it in a pot of water and boil for 1 hour.

Cool the salsify and place it in the refrigerator until fully set. Before serving, remove the baking sleeve and slice the salsify.
