Quick khachapuri is a simple and delicious dish inspired by Georgian cuisine but adapted for quick preparation. Unlike traditional khachapuri, this recipe uses kefir and baking soda to create soft, airy dough without long fermentation. Thin flatbreads filled with aromatic cheese and fresh parsley are pan-fried without oil, making them slightly lighter. The crispy crust outside and tender, stretchy center create an incredible combination of flavors and textures. They are best served with a spicy sauce like adjika for added zest. Knead the dough, add salt, and let it rest for 10-15 minutes, covering the bowl with a damp cloth.

Let's start :) Tear off a piece of dough and roll it out slightly. Grate cheese on top using a fine grater so that the filling is around the entire perimeter of the flatbread, and sprinkle with parsley. Wrap the dough into a pouch shape and roll it out again to about 20 cm in diameter. Continue this way until all the dough is rolled.

Fry each flatbread in a pan without oil until golden brown. Serve with adjika :) Enjoy your meal!
