Radish with cracklings

A great vodka snack. The cracklings should ideally be duck, but chicken cracklings will do, as well as pork fat cracklings if you don't keep kosher.

Peel the radish and cut it into fine strips.
- Green radish: 500 g

Chop the chicken trimmings into 2 by 2 centimeter pieces and place them in a hot pan. Render the fat over low heat, stirring constantly, until golden cracklings form. Remove the cracklings with a slotted spoon onto a paper towel.
- Chicken fat with skin: 300 g

Pour out two-thirds of the fat from the pan. In the remaining fat, sauté the sliced onions until golden.

Combine the radish, cracklings, and fried onion, add salt and pepper, and mix thoroughly.
