Marinated Cod and Grass Carp with Lemons

Something like ceviche: cod and grass carp spend a couple of hours in the company of lemons and spices. You can also use pike perch, mullet or some other nice fish.

Cut the lemons crosswise with a sharp knife, sprinkle them with sea salt, and leave them in the refrigerator for about 2 days.
- Lemon: 2 pieces
- Coarse sea salt: 100 g

Add to them 1 liter of water, black peppercorns, bay leaves, and coarsely chopped dill, as well as large cubes of white amur and cod (or pike perch, mullet — in general, any nice fish). Leave them all together in the fridge for 2 hours.
- Dry white wine: 200 ml
