In a blender, mix flour, finely chopped cold butter, and salt. Chop into fine crumbs. Add ice water and quickly knead the dough. Roll into a ball and refrigerate for 20-30 minutes.

Chop 5 boiled eggs into cubes, add finely chopped onion and cheese. Add 2 raw eggs (beaten beforehand) and mix gently.

Roll the dough to a thickness of 0.3–0.4 mm, place it on parchment paper in a baking tray. Add the filling in the center, wrap it up, brush the galette with egg yolk, and sprinkle with sesame seeds. Bake in a preheated oven at 180 degrees for 30–35 minutes until golden.
