Caviar from the sea, zucchini caviar is a delicate vegetable puree that has won the hearts of gourmets with its simplicity and rich flavor. Originating from Russian cuisine, it symbolizes the warmth of home and culinary traditions passed down through generations. Sweet carrots, soft zucchinis, and juicy tomatoes come together in a harmonious ensemble enriched with the aroma of basil and a hint of garlic's spiciness. This dish is perfect as an independent appetizer or as an accompaniment to meat and bread. Caviar is versatile: it can be served hot, chilled, or even as a sauce. Each spoonful hides the taste of summer and lovingly prepared vegetables, while its velvety texture makes it truly exquisite.

The number of zucchinis should depend on their size. If they are small, about 4-5 pieces, and if larger, 3-4. They need to be peeled with a vegetable peeler, and in larger zucchinis, remove the seeds (if they are not too hard, it's fine, everything will be steamed, and then the blender will do its job!). Cut the zucchinis into small cubes and pour them into a deep frying pan.
