Peel the cucumbers and grate them on a coarse grater, place in a sieve, mix with salt and let sit over a bowl for 10 minutes to drain excess liquid. Chop the greens.
- Cucumbers: 200 g
- Coarse salt: 1 tablespoon
- Dill: 20 g

Squeeze the cucumber shavings, transfer to a bowl, add yogurt, herbs, lemon juice, crushed garlic, minced shallot, and black pepper. Mix and salt if needed. Drizzle with olive oil and sprinkle with paprika.
