Mix room temperature broth, soy sauce, 20 ml fish sauce, Tabasco, 20 ml lime juice, minced garlic, and red chili.

Dip the chicken wings in the marinade and leave for a couple of hours. Then transfer to a heatproof dish, pour over the marinade, cover with a lid, and cook in the oven at 180 degrees for half an hour. Remove, place on a work surface, cool down and remove the bones.

For the sour-spicy sauce, blend olive oil, chopped shallots, pineapple, honey, candied ginger, green chili, wine vinegar, elderberry syrup, cranberry jam, 1.5 teaspoons of lime juice, 0.5 teaspoons of fish sauce, and 75 grams of mango. (You can use frozen mango puree instead of mango.)

Coat the wings in starch, then in egg yolks, followed by panko breadcrumbs — and fry in hot oil.
