Ham rolls with potato pancakes are an original dish of Russian cuisine that combines the tenderness of potatoes with the rich flavor of smoked ham. These rolls evoke cozy home breakfasts but can also be served as an appetizer on a festive table. The dish's origins trace back to the tradition of Russian potato pancakes, but here they become the base for a delicious roll. A crispy pancake infused with the aroma of dill and sour cream perfectly complements the spicy ham, enhanced by a thick sauce. This treat will appeal to lovers of hearty and expressive flavors. It can be served warm or chilled, secured with a toothpick for convenience. Perfect for small friendly gatherings or snacks throughout the day.

1
Grate 2 large potatoes on a coarse grater. Add yolks, sour cream, salt, pepper, and dill. Mix well.
- Potato: 2 pieces
- Egg yolk: 2 pieces
- Sour cream 20%: 2 tablespoons
- Salt: to taste
- Ground black pepper: to taste
- Dried dill: to taste
2
In a well-heated, olive oil-greased pan, spoon the potatoes into thin pancakes. Each pancake should match the diameter of the ham. Fry one side until golden brown, carefully flip with a spatula, and fry the other side. Cover with a lid and cook on low heat until done.
- Potato: 2 pieces
- Mayonnaise: to taste
3
Spread a thin layer of thick sauce on one side of each piece of ham (you can experiment - use tartar, mushroom sauce, cheese sauce, or '1000 islands'; if nothing suitable is available, you can use regular sour cream or mayonnaise). Place a potato pancake on top of the sauce.
- Cooked and smoked ham: 6 pieces
- Sour cream 20%: 2 tablespoons
- Mayonnaise: to taste
4
Wrap into a roll. Secure with a skewer.
