Take a pan that can fit the flatbread whole.

Prepare the filling for the quesadilla. For this, grate half a zucchini and cheddar on a coarse grater.

Mix them in a salad bowl with chopped green onions and cilantro.

In a dry hot pan, roast the cumin and grind it in a mortar with coarse salt.

Place one flatbread on the work surface and spread half of the filling on it, smoothing it with a silicone spatula without reaching the edges, then place the second flatbread on top and press firmly with a kitchen spatula.

Carefully place the quesadilla on a hot skillet and fry for 1-2 minutes on each side. Turn it carefully to avoid spilling the filling.
