Lazy lobio is a simple and hearty dish that combines the rich flavor of beans, sweet onions, and spicy seasonings. Originating from Georgian cuisine, classic lobio is made with red beans and aromatic herbs, but this simplified version uses canned beans, making the cooking process quick and convenient. The stewed beans acquire a velvety texture, while the tomato paste adds a slight tanginess. Served cold, it perfectly reveals its flavor nuances after steeping. It pairs excellently with aromatic flatbreads or fresh vegetables and can also serve as a light dinner on its own. This dish is not only tasty but also nutritious, rich in proteins and fiber, capable of warming the soul on a cool day.
