Feta and Spinach Pies (Spanakotiropita)

Spanakotiropita is a pie with spinach and feta.

If you are using frozen spinach, first thaw it and squeeze it very well. If you have fresh spinach, finely chop its leaves.
- Frozen spinach: 400 g
- Frozen spinach: 400 g

Finely chop the onion and sauté in olive oil until golden brown. While the onion is frying, finely chop the herbs (parsley, dill, and green onion).
- Onion: 1 head
- Olive oil: 4 tablespoons
- Parsley: to taste
- Dill: to taste

In a bowl, beat the eggs and add feta, mash it with a fork and mix it with the eggs to get a homogeneous mass. Add squeezed spinach, sautéed onions, chopped herbs, and a couple of tablespoons of olive oil. Mix everything well.
- Chicken egg: 2 pieces
- Feta cheese: 200 g
- Frozen spinach: 400 g
- Onion: 1 head
- Parsley: to taste
- Dill: to taste
- Green onions: to taste
- Olive oil: 4 tablespoons

Roll out the dough as thin as possible and cut into 12 cm squares. Place filling on each piece of dough (about a couple of tablespoons), fold into a triangle, seal the edges, and place the pastries on a baking sheet lined with parchment.
- Puff pastry: 250 g

Bake at 180 degrees for about 20-25 minutes until the dough is golden.
