Preheat the oven to 220 degrees. Cut the tomatoes in half lengthwise and place them cut side up in a single layer on a large ovenproof dish. Place garlic cloves and thyme sprigs between the tomatoes.
- Tomatoes: 8 pieces
- Garlic: 12 cloves
- Fresh thyme: 1 bunch

Sprinkle the tomatoes with olive oil and pepper. Bake in the oven for 40-45 minutes, or until the tomatoes soften and start to char slightly at the edges.
