Quinoa Burgers

A great option for a picnic or a snack at work. This is not a vegan or Lenten recipe - it has cottage cheese, and egg, and parmesan. And an unusual, complex-tasting cutlet that feels great next to red onions. Recipe by Elena Chekalova.

1
Rinse quinoa, add water in a 1:2 ratio, bring to a boil, and cook for eleven minutes. Cool down.
- Quinoa: 250 g
2
Add lightly beaten egg, finely chopped green garlic (or ramsons), chili pepper, and medium red onion to the cooled quinoa, along with low-fat dry cottage cheese and grated cheese - cheddar can be used instead of parmesan. Mix everything well.
- Chicken egg: 1 piece
- Garlic feathers: 40 g
- Chili pepper: 1 piece
- Red onion: 1 head
- Cottage cheese: 120 g
- Grated Parmesan cheese: 30 g
3
Salt the minced meat, add one tablespoon of rice flour. The mixture should be thick and sticky.
- Rice flour: 2.5 tablespoons
- Salt: to taste
4
Shape thin burgers, lightly dust them with rice flour, and fry in olive oil. Serve with spicy tomato or pepper sauce.
- Rice flour: 2.5 tablespoons
- Olive oil: to taste
