Finely chop the onion, sauté it in a small amount of oil until lightly golden. Transfer to a bowl.

Cut the chicken fillet into thin strips (no more than 1 cm thick) and fry in olive oil over high heat for 2 minutes, stirring. Add tomato paste, pepper, and salt, mix, hold on heat for another half a minute, and transfer the meat to the onion.

Grate the cheese on a coarse grater. This can be cheddar, parmesan, gouda, or another hard or semi-hard cheese.

Place one tortilla on a hot dry skillet and sprinkle it with a layer of cheese.

Spread a layer of filling on the cheese, then add another layer of cheese on top. Then cover with a second tortilla.
