Prepare 3 pancakes from buckwheat flour.

Wash, dry, peel, and slice the avocado.
- Avocado: 1 piece

Slice the salmon fillet into thin slices.
- Cold smoked salmon: 180 g

Mash the ricotta with sour cream, adding lemon juice, salt, and pepper to taste.
- Ricotta cheese: 100 g
- Sour cream: 100 g
- Lemon juice: 30 ml
- Salt: to taste
- Ground black pepper: to taste

Spread a third of the cheese mixture in a strip on the buckwheat pancake. Also, place strips of avocado and salmon, along with a few lettuce leaves (any other greens can be used). Roll the pancakes into a roll and press well.
- Ricotta cheese: 100 g

- Cold smoked salmon: 180 g
- Arugula: 40 g

Cut the pancake rolls into pieces 2-3 cm wide and keep in the refrigerator until serving.
