Dates wrapped in bacon and stuffed with pistachios are an exquisite appetizer with a deep history. Inspired by Italian culinary traditions, this recipe combines the sweetness of dates, the crunch of pistachios, and the salty spiciness of bacon. When baked, the bacon becomes crispy, and its fat gently envelops the sweet core of the dates and the nutty texture of the filling. A light fruity note from dried apricots adds sophistication to the dish. These miniature rolls are perfect for festive gatherings, wine evenings, or as an appetizer that will surprise guests with its flavor combination.
