Peel the potatoes and slice them into sticks using a mandoline, like for French fries. Transfer to a large bowl and cover with ice water. Let sit for a while.

Drain the potatoes and dry them well with a paper towel (it is very important that the potatoes are dry).

Place the potatoes on 2 baking sheets and drizzle with 2 tablespoons of olive oil. Sprinkle with herbs, cheese, and parsley. Then drizzle with the remaining olive oil and top with diced butter.

- Italian Herb Blend: 1 tablespoon
- Grated Pecorino Romano cheese: 2 glasss
- Chopped parsley: 0.3 glass
- Extra virgin olive oil: 4 tablespoons
- Salted butter: 4 tablespoons
