Preheat the oven to 180 degrees.

Clean the beetroot and slice it very thinly into rounds, about 1.5 mm. It's easiest to slice using a mandoline. Mix with olive oil.
- Beet: 2 pieces
- Extra virgin olive oil: 1 teaspoon

Place the beets in a single layer on 2 baking sheets, cover with foil, and bake for about 20 minutes until the edges start to dry. Remove the foil and bake for another 10-20 minutes until the chips are golden.

Transfer to a rack and let cool - the chips will become crispy.
