Clean the heads from the outer skin, leaving only the skin on the cloves without damaging the integrity of the head. Use a sharp knife to cut the tip of the head, removing a slight upper part from the cloves.

Place the heads on a baking sheet (it's easiest to roast garlic in a muffin tin) and drizzle with olive oil. Wrap each in foil and bake for 30-35 minutes or until soft (to check, press on the head).
