Cut the pork and fat into small pieces, and grind them in a meat grinder with pistachios. Add truffle oil, salt, a pinch of white pepper, a pinch of five-spice mix, and a smaller pinch of ground nutmeg to the mixture. Mix the filling and vacuum seal it in the shape of a rectangular brick.
- Pork: 700 g
- Lard: 300 g
- Pistachios: 30 g
- Truffle oil: 1 tablespoon

Heat the water to 70 degrees, add the vacuum-sealed sausage, and cook for two hours.

Cut the crusts off five pieces of toast bread and chop the flesh into large pieces. Place it in a blender with crushed garlic, chopped herbs — cilantro, basil, and thyme leaves — and a teaspoon of olive oil. Turn it all into green bread crumbs.
- White bread: 5 piece
- Garlic: 1.5 clove
- Coriander: 1 stem
- Basil: 1 stem
- Thyme: 2 stems

Finely slice the gherkins. Spread Dijon mustard on a plate and pile the gherkins on top.

Take out the cooked sausage, slice it into portions, and fry in olive oil until a nice golden crust forms, then carefully transfer it to a baking sheet so it doesn't fall apart. Cover the sausage with green bread crumbs and place it in a preheated oven at 180 degrees for three minutes.
