Preheat the oven to 230 degrees.

In a blender, mix yogurt, watercress, mayonnaise, finely chopped green onion, basil, mint, and vinegar. Add salt and pepper, and blend well. Chill.
- Natural low-fat yogurt: 300 g
- Watercress: 70 g
- Light mayonnaise: 75 g
- Green onions: 20 g
- Crushed basil leaves: 3 tablespoons
- Crushed mint leaves: 1 tablespoon
- Balsamic vinegar: 1 teaspoon
- Salt: to taste
- Ground black pepper: to taste

Wash the potatoes well and dry them. Without peeling, cut each into 4 pieces and transfer to a bowl. Add olive oil, salt, and pepper. Mix well and place on a baking sheet. Bake for about 35-50 minutes until the potatoes are done.
