Avocado Dip

Cut the avocado in half, remove the pit, and scoop out the flesh with a spoon into a large bowl. Add a tablespoon of lemon juice (no more is needed, lemon is used here to prevent the avocado from changing color). Mash the avocado flesh with a fork and mix it with sour cream.

Cut the tomato. Chop the chives. Add to a bowl and mix. Season the dip with salt and pepper. Serve with thinly sliced fresh vegetables (celery, carrots, cucumbers, sweet red peppers, etc.).
