Heat the pan and fry the bacon pieces until crispy. Transfer to a paper towel, cool, and cut into small pieces.

Leave 1 tablespoon of fat from the bacon in the pan and sauté the finely chopped onion until soft, about 3 minutes. Add the minced garlic and cook for another minute. Transfer to a plate and let cool.

Divide the minced meat into 16 parts and shape them into flat round patties. Place grated cheese on half of them and cover with the remaining patties. Seal the patties together to prevent the cheese from leaking.
