Peel the carrot and cut it into 5 cm pieces. Transfer the carrot to a deep bowl, add cumin, a pinch or two of salt, coriander seeds, and pour in olive oil.
- Carrot: 1 kg
- Caraway: 2 teaspoons
- Salt: to taste
- Coriander seeds: 1 teaspoon
- Olive oil: 50 ml

Mix the carrots with oil and spices by hand, ensuring each piece gets some of each. Then transfer the carrots from the bowl to a baking tray and place it in an oven preheated to 200 degrees for twenty-five to thirty minutes, stirring occasionally.
