Heat the oil in a pot to 190 degrees over medium heat.

Meanwhile, cut the ends off the plantains. Slice them in half and carefully peel the skin. Then cut into very thin long pieces with a sharp knife or a mandoline.
- Green plantain: 900 g

Fry in heated oil in batches of 10-12 pieces until golden brown, about 1 minute. Place on paper towel and immediately salt.
- Salt: to taste
