Sweet baked carrots are a vibrant and aromatic dish from Chinese cuisine where simple ingredients transform into a gourmet treat. The root vegetable, baked with butter and sugar, develops a caramelized crust and a rich, sweet-creamy flavor. Adding cinnamon can impart subtle spicy notes that enhance its warm aroma. Carrots, with their natural sweetness, pair perfectly with the soft caramel glaze. This dish delights not only in taste but also in its simplicity of preparation—just bake the carrots in the oven, allowing the buttery-sugar mixture to deeply infuse their structure. Sweet baked carrots can be served as a side to meat and rice dishes or enjoyed as a delicate standalone dessert.

Thoroughly mix the oil, sugar, water, and optionally, a pinch of ground cinnamon. Wash the carrots well, remove any damaged skin areas, but do not peel. Young carrots have a thin skin.
