Fry the bacon in a well-heated pan over medium heat until crispy. Transfer to a paper towel and cut into pieces.

In the same pan, add finely chopped onion and sauté until soft for 5 minutes. Add chopped chard and cook until soft, stirring, for 6 minutes. Add vinegar and cook for another minute. Remove from heat and add bacon and julienned beetroot. Season with salt and pepper, mix well, and serve.
