Boil the chicken fillet in boiling water until cooked and cut into small cubes. Transfer to a bowl.

Preheat the oven to 200 degrees.

Cut each pita into 8 triangles. Brush the inner sides of the triangles with vegetable oil and place in the oven for 8-10 minutes until golden and crispy.

In a blender, mix peanut butter, cilantro, Tabasco, lemon juice, water, ginger, salt, and remaining vegetable oil. Add the peanut mixture to the chicken and mix well. Season with salt to taste. Serve the mixture on crispy triangles and garnish with cilantro leaves.
