Preheat the oven to 200 degrees. Rinse the mussels well. Check all shells and remove the open ones. Lay out 2 sheets of foil on the table, shiny side up.
- Mussels in shells: 500 g

Mix the mussels and all the vegetables, finely chopping them, add crushed garlic and grated ginger. Mix well and divide into 2 portions. Place each in the center of a sheet of foil and wrap it like an envelope.

- Green onions: 4 stems
- Carrot: 1 piece
- Garlic: 2 cloves
- Green chili pepper: 1 piece

Slightly open the mussels and spray with sake and soy sauce, place pieces of butter on top. Tightly wrap in foil and place on 2 baking sheets. Put in the oven for 15 minutes until all shells open. Transfer to plates and serve.
