This recipe emerged from the tradition of pickling vegetables, which is very popular in Georgia. It is perfect as an appetizer for meat dishes, enhancing them with freshness and rich flavor. Prepare the necessary ingredients.

Wash green tomatoes well under running water. Cut into two or four pieces. If desired, the stem can be removed.
- Green tomatoes: 1500 g

Wash the parsley well, remove any excess, chop finely, and place in a separate container.
- Parsley: 50 g

Wash the red sweet pepper well, remove the seeds and stems, cut into small cubes or strips, and add to the container with chopped parsley.
- Red sweet pepper: 3 pieces

Peel the garlic, wash it under running water, press it through a garlic press, and add it to the container with chopped parsley and pepper.
- Garlic: 1 head

Wash the hot pepper well, remove the seeds and stems, cut into small cubes or strips, and add to the container with the chopped vegetables.

Add the prepared vegetables to the chopped green tomatoes in a container and mix everything well.
- Green tomatoes: 1500 g
- Parsley: 50 g
- Red sweet pepper: 3 pieces

Add 2 tablespoons of salt and 4 tablespoons of sugar to the tomatoes.
- Salt: 2 tablespoons
- Sugar: 4 tablespoons

Add 200 ml of 9% vinegar and 100 ml of vegetable oil to the tomatoes.
- Vinegar 9%: 200 ml
- Vegetable oil: 100 ml

Mix all the ingredients well.

Place a plate in the container with tomatoes and apply a weight. Leave the tomatoes to marinate overnight at room temperature.
