Remove the internal organs and chitinous plate (shell) from the thawed squid.

Thoroughly rinse the prepared squid bodies or fillets in water 3 times.

Drop into boiling salted water (water to squid ratio 3:1).
- Squid: 700 g

Boil for 3 minutes from the moment of boiling.

Slice the chilled squid into thin strips across the fibers.
