Sift the flour into a bowl, add 3/4 of diced butter (the butter should be at room temperature - this makes it easier to mix with the flour). Mix with a knife until a homogeneous mass is obtained. Add parmesan, 1/2 teaspoon of mustard, a pinch of cayenne pepper, and just over a tablespoon of cold water. Knead a firm dough. Place the dough in the refrigerator for 30 minutes, wrapped in plastic wrap.
- Wheat flour: 175 g
- Butter: 100 g
- Parmesan cheese: 40 g
- Dry mustard: 0.8 teaspoon
- Cayenne pepper: to taste

Roll out the dough into a thin layer, cut out 19 circles, and place them in greased molds. Prick with a fork, brush with beaten egg, and bake for 10 minutes at 180 degrees.

For the filling, finely chop the onions and sauté in butter until golden brown (about 30 minutes). In a separate bowl, whisk the egg with cream and the remaining mustard, adding salt and pepper. Distribute the onions evenly in the cooled tartlets, then pour the egg mixture on top.
