Cut off the top and bottom of the pineapple to make a barrel shape. Place it on a board and use a sharp knife to peel the skin from top to bottom. Cut the flesh into wedges, remove the core, dice it, and place it in a suitable container.

Add finely chopped seedless chili, coriander leaves, pour in lime juice and oil. Add salt and pepper to taste, mix well. Let it marinate at room temperature.
